Approved Nutrition Labeling Meeting Federal Requirements

Licensed dietitians must meet individual state licensure requirements. Facilities that receive state and federal funds require a dietitian to be licensed in that state to assure compliance with all regulatory guidelines. Licensure is renewed on a regular basis, and dietitians must meet state licensure requirements to have their license renewed. This license is in addition to the RDN registration.

Berube Consulting PLLC is a food service and nutrition professional firm that provides services to the healthcare and food service sectors. The firm offers nutrition analysis and labels for recipe items as well as menu development. The firm also provides the required experience and competencies for interns to successfully complete dietitian programs and become eligible to take national exams.

Expert Witness

A registered licensed dietitian’s knowledge is utilized in expert witness testimony to evaluate if the standards of care or regulations have been met in the care of clients, patients, customers, and institutions. The dietitian holds the role of nutrition-care expert in these facilities and is responsible for the nutrition care of patients and assurance of the facility’s capacity to conduct food service operations under all regulatory requirements. The testimony and knowledge of the expert provide fact-based evidence and credibility to the case. The USDA, Federal Food Code, CMS, Joint Commission of Accreditation of Health Care Organizations, Department of Health and Human Services, and other agencies have specific standards of compliance. The dietitian can address whether those standards were met in terms of food service and nutrition care.

About Bonnie Berube

Bonnie is a Registered, Licensed Dietitian Nutritionist and the owner of Berube Consulting PLLC. Her company has provided outstanding Food Service and Nutrition Management support to clients in premier Health Care, Corporate, and Education organizations for over 30 years. Bonnie and her team provide expertise in a variety of areas including clinical nutrition management, database nutrition analysis, meal planning and development, and Food Service Regulation and Management.

Bonnie has a Bachelor's Degree from The University of Houston and a Master's Degree from Texas Woman's University. She is a Licensed Dietitian, Registered Dietitian Nutritionist, and a certified Serv®Safe Trainer and Proctor.

Bonnie is passionate about nutrition education. She frequently participates in Site Reviews for the Accreditation Council for Education in Nutrition and Dietetics, enjoys speaking at Continuing Education Classes, Nutrition Seminars, and Corporate Wellness Programs, and mentors Dietetic Interns in the University of Texas School of Public Health Dietetic Internship Program and ISPP and Distance Learning internship programs of the Academy of Nutrition and Dietetics.

Bonnie’s support for the culinary community is evident. She is Past President of the Houston Area Professionals in the Culinary Arts, Texas Dietetic Association, Houston Area Dietetic Association, and Texas Executive Women, Bonnie is also a member of the Advisory Committee of the Culinary Arts Programs at San Jacinto Colleges and UT School of Public Health. Additional career highlights include former Administrative Director of Dietetics at Hermann Hospital in the Houston Medical Center, teaching at The University of Houston, University of Texas, and Houston Community College, and recognition by the Federation of Houston Professional Woman of Excellence.
